These pancakes are super filling and pretty good for you too.
This quantity makes 3 ‘american pancake’ size pancakes – we find this is just enough for me and Arabella. If you want to make enough for another adult I’d double this quantity.
- 50g oats
- 100g cottage cheese
- 2 eggs
- 1 teaspoon of cinnamon
- vegetable or coconut oil
- Blend the oats, cottage cheese, eggs and cinnamon in a food processor until the mixture is smooth with no lumps.
- Heat a little oil in a frying pan on a medium heat, if using the above quantities pour a third of the mix in for each pancake, cook for 2-3 minutes on each side.
For Arabella I usually mash half the pancake up with half a banana and spoon feed, the other half of the pancake I slice and she feeds herself once we’ve finished the mash.
I have mine with either honey or fruit depending on whats in the fridge!
